Chocolate should be stored in a cool, dry place (between 15°C and 18°C), away from heat sources and direct sunlight. Do not store it in the refrigerator, as this may alter the sugars.

This is a natural phenomenon called fat bloom. If chocolate is stored at an unsuitable temperature, above 18–20°C, the cocoa butter rises to the surface and creates a white coating. The chocolate is still perfectly edible; it is simply less pleasant to look at.

If oil appears on the surface of a spread, simply take a teaspoon and mix it well. The oil may rise to the surface due to a natural process. Nuts are rich in beneficial unsaturated fats. When they are finely ground to produce the spread, they release their natural oils. Over time, due to gravity, the solid part (cocoa and fibre) settles at the bottom, while the liquid part rises to the surface.
